Preheat the oven to 225°C. In a mini muffin tin add a splash of vegetable oil into each of the 24 compartments. Place tray in the oven for 10 to 15 minutes so the oil is piping hot.

While the oil is heating, beat eggs, flour, milk and a pinch of salt and pepper together in a jug until they form a light and smooth batter. Carefully remove the train from the oven and pour the batter evenly into the 24 compartments, onto the hot oil.

Place track back in the oven to cook for approximately 8 – 10 minutes or until golden and well risen.
